It is still rare to find monovarietal pelaverga from anywhere in the Piedmont, let alone the Colline Saluzzesi. This wine is macerated for ten days before undergoing spontaneous fermentation in stainless steel, where it remains for 6 months before being bottled. "Divicaroli" means "belonging to Saint Charles" in Latin and is named such because the pelaverga comes from a vineyard named after St. Charles.
