They then decided to bring together pretty plots all located in the Côte des Bar, the southernmost sector of Champagne. 'Douce Folie' is a plot located in Merrey sur Arce, benefiting a southwest exposure for good maturity. The  plot was selected for its suitability for the production of colored wines: 50-year-old vines, limited yields, specific work: pruning, disbudding, harvest in green, manual leaf stripping, grassing, plowing. This Rosé is produced only during vintages allowing perfect sanitary condition and optimum ripeness of the grapes.
