<<< For the Tradition, Michael wanted to borrow from one of the other great arts of Champagne: blending. The Tradition is a fairly traditional Champagne blend of Pinot Noir and Chardonnay, around 50-50. The grapes are sourced from several top Californian sites — all cool, higher altitude sites like Alder Springs and Rorick, which together provide a majority of the fruit for the current release. Production is exactly the same as it is for Ultramarine, raising the wines in barrel without sulphur, no dosage, and employing some very nice Stockinger casks.
