Hirotake started out in chemistry and biology before making his way to Bordeaux for oenology school. Syrah from 25 year old vines, spontaneously fermented in oak. As natural as it comes and quite special in our opinion.
Eric Texier, Côtes-du-Rhône Brézème, 2018 (750ml)
Brézème is a cold climate Syrah, which gives a very wild wine with a strong personality, presenting notes of blackcurrant leaves and very intense black olives. Far from the very ripe southern Syrah, the wine rather evokes the Burgundian balance. >>>
